What does this PR do? What is the motivation?

Addresses DOCS-15263

Adds a new Charts page documenting Journey Paths Analysis as a standalone chart type in Product Analytics (previously only available as a drill-down inside Funnel Analysis). Also:

  • Updates the Charts overview page to list Journey Paths Analysis alongside the other chart types
  • Removes the now-redundant journey paths description from the Funnel Analysis page, replacing it with a further reading link to the new page
  • Aligns the chart names and order in the sidebar nav, page titles, and Charts overview page with the exact names and order used in the product's Create New chart menu (Funnel, Journey Paths, Pathways, Retention, Analytics)

Simplify the Journey Paths Analysis page into numbered steps, add a
customization callout screenshot, and add the missing sidebar nav entry.
Remove unused screenshots left over from earlier drafts.

The cross-links to Funnel Analysis and Pathways were carried over from
initial drafting but aren't relevant further reading for this page.
Rename sidebar nav entries and page titles for Funnel, Journey Paths,
Pathways, Retention, and Analytics to match the exact names and order
used in the product's Create New chart menu.
